Blood Sugar Tuesdays Ep.6- Paleo Pancakes vs. Oatmeal

I was fortunate to have my friend, Dr. Walters in town to do some comparisons for different breakfasts. I found this delicious cocunut flower pancake recipe online and was curious to see how coconut flour would affect blood sugars. I find many of my patients eat oatmeal for breafast, so I found a recipe from The American Diabetic Associations site to try out. As I mentioned in last week’s episode, the ADA has absolutely atrocious nutritional recommendations and this oatmeal recipe is a good example of what not eat in the morning.

 

Fluffy Coconut Flour Pancakes

Serves 2-4

Ingredients:

  • 4 eggs, room temperature
  • 1 cup coconut milk
  • 2 tsp vanilla extract
  • 1 tbsp honey
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • Coconut oil for cooking fat
    1. Preheat frying pan or griddle over medium-low heat. In a bowl, mix eggs together well until frothy. Mix in coconut milk, vanilla, and honey.
    2. In a second bowl combine dry ingredients by whisking together the coconut flour, baking soda, and sea salt thoroughly. Mix wet and dry ingredients together well.
    3. Add coconut oil or cooking fat of your choice to griddle or pan. Pour or ladle enough batter to form a small (2-3 inch diameter) pancake. Cook until edges start to dry and firm then flip and cook through. Different pans and griddles cook differently, so your first pancake is your trial piece.
    4. Keep pancakes warm in a warming drawer or 200F oven until ready to serve. Top with real maple syrup, honey, or fruit of your choice.

    Hi Shannon,

    We made these pancakes this morning. Kids had them with bacon and maple syrup, I had them with thawed frozen blueberries. Erin not impressed – I think the texture put her off, but she’s not even four yet, so what would she know 🙂

    Declan pronounced them “too coconutty” but proceeded to polish them off.

    I really enjoyed them, and they were so filling. I had opened a tub of Greek yogurt to have with them, but was too full to eat it.

    And far fewer cals that regular pancakes, so that’s a big thumbs up from me.

    Very tasty!! I made them for my boyfriend’s VERY picky 6 year old and he gave them two thumbs up. I added blueberries and drizzled them with honey. We feel so much better giving him these pancakes for breakfast instead of cereal!
